You won't hear the hum of automated assembly lines here. Instead, you hear the rhythmic kneading of dough, the whir of ovens, and the warm chatter of people for whom craft is so much more than just a job.
“Every single item is made from scratch on site — we even knead our shortcrust pastry by hand, without pre-packaged mixes or mass-production shortcuts. We prepare all our fillings ourselves, too: zero powders mixed with just water and oil. We focus on true craftsmanship and exceptional taste,” explains Darek, Production Manager, who oversees the entire process.
Every dessert and savory snack is created using top-tier ingredients. In fact, every morning starts with evaluating those very ingredients — deliveries are meticulously inspected long before anything ever reaches the mixing bowls.
A Morning Race Against the Clock and Uncompromising Quality
A day in our craft kitchen follows a steady yet dynamic rhythm. At 7:00 AM sharp, the entire team is ready to go. Darek begins by going over schedules, checking attendance, and managing current orders.
“My job is to supervise production, address any errors with the team on the spot, and make sure everything is done strictly according to our process. I’m on my feet all day because I oversee both the sweet and savory departments. From here, it all goes out to the cafés, to our guests... It's an entire journey that requires constant attention,” he explains.
Every day brings the challenge of handling the unexpected — from minor equipment glitches to tight delivery windows. Finished baked goods must not only pass Darek’s quality control, but also cool down properly (to 2–8°C) before being handed over to the drivers. Despite the time pressure, one non-negotiable rule stands: any product that doesn't meet our standards for specification, taste, or appearance will never leave this kitchen.
“If something is mismeasured or a recipe isn't followed to the letter, we start over from scratch. We never release a product that falls short of our standards. I always tell the team: a mistake made here isn't the end of the world, but it can never reach the customer's hands,” Darek emphasizes.
A Team That Operates Without Words
This attitude requires immense team maturity and trust built over years of working together. The core team has been collaborating for nearly 11 years. It is precisely this close-knit crew that allows Green Caffè Nero to maintain consistent, top-tier quality across all its locations. Although the facility employs around 30 people across two shifts, the entire operation runs like a well-oiled machine.
“I respect them and love them with all my heart. I’ve been here with some of them for nearly 11 years. I’ve grown them into shift leaders and foremen. I set the goals, but they bring their own touch to every single recipe. Without these skilled professionals, without my crew, I simply couldn’t function here,” adds Darek. There have been many moments that only strengthened his conviction that a tight-knit team is the most essential ingredient of all. “Before I even had a chance to open my mouth and say anything, they were already taking action on their own. Everyone knew what to do and how to pick up the pace without ever compromising on quality. I joked afterwards that, for a moment, my only job was bringing them coffee. I was ridiculously proud of them!”
From Idea to Your Favorite Bite
Introducing a new baked item to the café menu takes weeks of trial and error. Combining flavors and perfecting the presentation requires both clever ingenuity and a true artisan’s touch. The menu rotates with the rhythm of the seasons, and as Darek admits, his personal favorite from the savory selection is the seasonal asparagus and fried egg sandwich. “It’s only available for a short six-week window, but whenever it appears, I know I’ll always reach for it.”
